I started making sandwich fillers out of frustration. As a health coach, nature lover and lifelong veggie, I'm all about the plants! After going vegan and loving it, I wanted to share the benefits with my family and friends. They weren't as gung-ho on the idea as I'd expected. The idea of tackling everyday foodie conundrums was scaring them off.
One question in particular kept ringing in my ears,
"what the heck would I put in my sandwich?" - my grandad, 2019.
Now, as much as older relatives are known for whinging (sorry Terry), he did seem to have a valid point here. I'd struggled myself with this very problem… and I'll bet you have too. Other than hummus - which I'd really overdone - and vegan cheese - which I wasn't a huge fan of - I didn't have many clever ideas. My dad wasn't happy with his options for sandwiches either - or wraps or jacket potatoes. He was especially vocal about the spuds.
So I started working on my sandwich game. Chickpeas were my weapon - uh hum - plant of choice because they are yummy, so versatile, keep you full, fight cancer (yes dad!) and help control diabetes (take note, grandad!).
After spending a few months developing recipes in a tiny shared kitchen in Vancouver, I moved back to the UK (and in with my parents) to give this a real go. I booked a market every weekend from September to Christmas and WE KEPT SELLING OUT. Turns out I wasn't the only one struggling with my butties. Now, the business is growing and I’m on a plant-powered mission to bring Dippy’s to the nation!
